CSA Week 5: Hot Abundance

nubiriverfarm

Hello All,

All this heat and sunshine has the whole farm exploding with life. The flowers are blooming, turning their colorful heads toward the sun and this morning Jasen harvested 170 pounds of beautiful cucumbers! We have started harvesting cherry tomatoes and beans and tomorrow we will get the first of the green and purple bell peppers.

Around this time of year I am reminded how I long for this abundance and color in the darkest, coldest days of winter. I think the contrast of the seasons here in New Hampshire are what make the summer so special. As we pick beautiful peppers and tomatoes and cucumbers I can hardly believe they grew from a seed I planted in March. Even after many years of farming, it still brings such joy and awe. We hope the farm can do the same for you. The pick your own flowers are popping off, so make a little time to wander through them this week and pick a bouquet, it is what summer is all about!

What's in my share this week?

This week may include:

Kale - chop leaves and stems and sauté with oil, salt and pepper.

Head Lettuce -  a mix of green and red curly heads.

Leaf Lettuce - a mix of red and green flat and curly. Washed, bagged and ready to salad!

Bell Peppers - a mix of green and purple bell peppers. One of our favorite crops to grow. Soon there will be reds and oranges as well.

Beets - red and gold beets with greens. Roast, saute, soup or make a dip! Remember, the greens are edible too, prepare as you would swiss chard or kale.

Summer Squash - zucchini, yellow summer squash and patty pan. All go great in stir fries or as a soup (see below). If you aren't a huge squash fan try chocolate zucchini muffins to get your veggies in.

Cucumbers  - holy moly 170 pounds! There are plenty for all this week.

Fresh Onions - red and yellow. Fresh onions can be used as you would a regular onion, just store them in a bag in the fridge.

Cherry Tomatoes - 1/2 pints to start, a mix of gold, red and peach. Tastes like summer!

Garlic Scapes - it is scape season! Grab some basil from the herb garden and make scape pesto. Or saute them before you add leafy greens to the pan for added flavor.

Plant Seedling - we have leftover seedlings from our Plant Sales this year. If you are still planting your garden, grab a seedling or two! We have oregano, sage, and thyme.

Available for Pick your Own

Peas - there might be some peas left if you are up for some gleaning, but peak pea season has passed

Cilantro

Parsley

Basil

Oregano

Lemon Balm

Sage

Thyme

Mint

FLOWERS! Pick your own herbs, flowers and peas are open any time. If you don't have time on Tuesdays, come back another day, we would love to see you.

Recipes Ideas:

I am so sorry about the false napa cabbage advertising last week, it is my first year growing them and I realized, on Tuesday morning, that I wanted them to size up and really create a head. I checked this morning and they are getting there, so hopefully next week! The star of this week's share is summer squash now that we finally have enough to go around. Last year a CSA member shared with me this delicious and simple zucchini soup that can be served hot or chilled for these sweaty days.Zucchini SoupZucchinis (yellow squash would work too)Onions, garlic scapes, shallots, scallions etc (allium of choice)GarlicBrothHerbs of ChoiceSaute onions, scapes, scallions etc and add zucchini, herbs and broth. Cook for a few minutes and puree. This recipe is versatile, just an idea to get you started! Amounts are up to you, depending on how much soup you want.Zucchini also does great as a noodle! Here is a zucchini noodle recipe to get you started but they pair great with many flavors. If I am not feeling like summer squash I like to make this chocolate zucchini cake (or as muffins), especially if I have a plethora of large zucchinis. I am often not that creative when it comes to beets but here is a yummy looking beet tzatziki that would make a great fridge staple for dipping veggies, meat, bread you name it.Have fun! Send us recipes if you tried something and loved it.THANK YOU FOR YOUR SUPPORT! We are excited to be growing for you. See you on Tuesday.
